I love a good veggie burger. With V vegetarian on two days of the week, one of them being a Saturday, veggie burgers are a great option for me to take to a potluck or get together so that he has something to eat and I don’t have to spend too much time making them. Since veggie burgers are so easy to put together these also make a great weeknight meal and can be perfect to pack in the lunchbox. I love the black bean burger recipe that I have posted in the past but for a while I had been thinking of doing a chickpea burger. After looking at different recipes online, I combined elements of a few of them and came up with the recipe for these vegan Chickpea and Walnut Masala Burgers that I am posting today.
While most veggie burgers are crumbly, these chickpea burgers benefit with the moisture that grated carrots lend to the patty. Prompted by the #iheartwalnutcontest I decided to add toasted walnuts to the burgers and they do make a great addition to these meatless burger patties. A little roasted cumin, garam masala and chillies make these burgers flavorful and my new favorite recipe.
For convenience I used canned chickpeas, but you could soak and boil the chickpeas.Instead of regular burger buns I like serving these with whole wheat english muffins or sandwich bread because I like the bread to patty ratio. I serve it with some garlic tahini sauce, but tzatziki dip would also taste great.While I don’t have a gluten intolerance, for people who prefer gluten free you can use gluten free bread to make the bread crumbs. You could also add cheese to the patty mix, but I wanted to keep them vegan so that they cater to a wider range of people with different dietary restrictions. Cheese lovers can just add a slice of cheese on top!
My Sunday was spent recovering from Saturday night’s drinking session. We had friends over and I had too many watermelon margaritas (that I made) and tequila shots and spent Sunday drinking litres and litres of water to flush out the alcohol in my body. I have never been a great drinker and with age I am not improving. Thankfully I make sure to drink water while I am drinking and enough before I sleep so that I don’t get headaches the next day. Besides the watermelon margaritas, which I feel I should share a recipe of ( they have lime, jalapenos, watermelon and tequila!), the following was on Saturday’s menu. Appetizer Menu:
- Roasted red pepper and garlic hummus (recipe yet to be posted on the blog)
- Tzatziki dip
- corn and potato tikkis ( a recipe that I adapted from here and will share soon with my adaptations)
Dinner Menu:
- Slow cooker dal makhani
- Vegetable raita
- Paneer makhani
- Missi Roti
- Vegetable Pulao
Inspired by theabove list I am thinking of doing a weekly meal plan round up. Is it something you would be interested in? Let me know your thoughts. For now hope you enjoy these vegan Chickpea and walnut masala burgers.
- 1 can chickpeas, drained and washed
- 1 cup walnuts, toasted and chopped to small pieces
- ¼ onion, finely chopped
- 2 tbsp parsley, finely chopped
- 4 cloves garlic, finely chopped
- 1 tbsp roasted cumin powder
- 1 cup finely grated carrots
- 1 tsp garam masala
- 1 inch fresh turmeric grated ( or ¼ tsp turmeric powder)
- ½ tbsp lemon juice
- 3 green chillies, finely chopped
- 1 cup bread crumbs (use gluten free bread to make crumbs for gluten free option)
- Drain and rinse the chickpeas.
- Toast the walnuts at 400 F for 6-8 minutes, keeping a close watch.
- Chop or grate the veggies and herbs.
- In a large enough bowl, combine all the ingredients except the breadcrumbs. Mash the chickpeas slightly.
- Form the mixture into patties. Coat with bread crumbs. Refrigerate the patties covered for an hour. It helps when frying.
- In a large skillet heat oil over medium heat. Cook patties until golden brown, about 4-5 minutes on each side.
- Serve with your choice of bun and condiments.
i hope you have recovered my friend…post-drinking session sucks but will we ever learn? no, not me…on a different, i have not made veggie burgers in a long time. this is definitely on my list of things to make as i have all the ingredients.

I love veggie burgers since V is vegetarian on two days of the week and helps me to make a meal when have frozen veggie burgers to work with. Hope you get to try it out and nope we will never learn.
