Chickpea and Walnut Veggie Burgers

Serves: 8 burgers
Ingredients
  • 1 can chickpeas, drained and washed
  • 1 cup walnuts, toasted and chopped to small pieces
  • ¼ onion, finely chopped
  • 2 tbsp parsley, finely chopped
  • 4 cloves garlic, finely chopped
  • 1 tbsp roasted cumin powder
  • 1 cup finely grated carrots
  • 1 tsp garam masala
  • 1 inch fresh turmeric grated ( or ¼ tsp turmeric powder)
  • ½ tbsp lemon juice
  • 3 green chillies, finely chopped
  • 1 cup bread crumbs (use gluten free bread to make crumbs for gluten free option)
Instructions
  1. Drain and rinse the chickpeas.
  2. Toast the walnuts at 400 F for 6-8 minutes, keeping a close watch.
  3. Chop or grate the veggies and herbs.
  4. In a large enough bowl, combine all the ingredients except the breadcrumbs. Mash the chickpeas slightly.
  5. Form the mixture into patties. Coat with bread crumbs. Refrigerate the patties covered for an hour. It helps when frying.
  6. In a large skillet heat oil over medium heat. Cook patties until golden brown, about 4-5 minutes on each side.
  7. Serve with your choice of bun and condiments.
