Chickpea and Walnut Veggie Burgers

Serves: 8 burgers
- 1 can chickpeas, drained and washed
- 1 cup walnuts, toasted and chopped to small pieces
- ¼ onion, finely chopped
- 2 tbsp parsley, finely chopped
- 4 cloves garlic, finely chopped
- 1 tbsp roasted cumin powder
- 1 cup finely grated carrots
- 1 tsp garam masala
- 1 inch fresh turmeric grated ( or ¼ tsp turmeric powder)
- ½ tbsp lemon juice
- 3 green chillies, finely chopped
- 1 cup bread crumbs (use gluten free bread to make crumbs for gluten free option)
- Drain and rinse the chickpeas.
- Toast the walnuts at 400 F for 6-8 minutes, keeping a close watch.
- Chop or grate the veggies and herbs.
- In a large enough bowl, combine all the ingredients except the breadcrumbs. Mash the chickpeas slightly.
- Form the mixture into patties. Coat with bread crumbs. Refrigerate the patties covered for an hour. It helps when frying.
- In a large skillet heat oil over medium heat. Cook patties until golden brown, about 4-5 minutes on each side.
- Serve with your choice of bun and condiments.
