So I have been MIA for quite some time. The reason? I have been traveling a lot the past two weeks. First it was Phoenix. V had a week long conference and I tagged along. I managed to do a quick post about the four layer chocolate cake while I was there, but that was about it. We came back Sunday, the week before last. I was home for two days and then I left for a 4 day vacation to New York, sans V.

It was my second time in New York, though the first actually doesn’t count. I was in first grade the first time I went there, and don’t remember my visit at all. So according me it didn’t count. But this one does. And it was the most amazing vacation I have had after a long time. And OMG I am in loooooove with the city! Thanks to my friends and V’s cousin I was able to do a lot- all the tourist-y stuff like Times Square, Wall street, view of Statue of Liberty and the non conventional stuff as well- a 15 mile bike tour of lower Manhattan and Brooklyn! I will share more of my trip to New York in a later post, but for now I must tell you I am totally hungover on the place. I got back Monday early morning, and every time I see something related to New York on TV, I feel like crying. Yes, I miss the city THAT much!

I started 2012 with a resolve to make more layer cakes.

So, I made the sky high carrot cake for two (which turned out great). Then, I made the momofuku birthday cake (which had a few mishaps but tasted great nonetheless). In between the two, I  made the lavender chiffon cake again for my for my friend’s birthday in March. And then there was the mascarpone meringue layer cake thrown in as well.

But, three layers had been the furthest I had gone with my layer cake resolution.

And then came this cake.

The original cake is a two layer cake with oodles of oreo cream cheese frosting in between. But I decided to go big and made a four layer, very chocolatey cake with an oreo cream cheese frosting. Did I hear someone say yum? You betcha, it was!

For the past several days I haven’t been cooking much. Either its been leftovers or take out (which in our town means pizza mostly) or its been a thrown together sandwich or just toast and egg or parantha and egg. I have been so busy with other stuff that I don’t feel like spending time in the kitchen. Nor have I been able to find time to spend on my laptop and blog. Or respond to comments. Or time to check everybody else’s blogs and what’s been cooking in their kitchen. Plus,I hardly get time to spend on pinterest or foodgawker (my daily food porn fixes!). Thank god for iPhone apps, I still am able to get a little of my daily dose of the two. But it’s not enough! I want more. No, I NEED more time on these two sites!

Its good that life has been busy, but I wish it didn’t take away from blogging (food related) time. Or maybe I just need to learn how to manage everything better.

Anyway, since I have not been cooking anything new, this is the best time to tend to the backlog of recipes I have in my folder. This ice cream is one such recipe that has been in my folders for a very long time.
