From Arizona to Delhi to Allahabad to Agra to Chandigarh, celebrating birthdays, parent’s anniversary, a friend’s bachelorette, cousin’s engagement and a new year I am again back to Allahabad and am staying put here for the next ten days. Post that I travel to Kolkata, Lucknow, Jaipur, another visit to Delhi and Chandigarh and a short visit to Jim Corbett National Park for one of my friends’ wedding. This trip has been very busy, and a lot of time has been spent in trains traveling from one city to the other. the trains, thanks to the fog setting in the northern parts of India, have been getting delayed, extending the time spent with the Indian Railways to even more and increasing the frustration that comes along with delays in your schedule. But now I am home, at my parents. πŸ™‚

Being in India has made me lazy and though I have tried a little cooking/baking here and there, there has not been much going on in the novice housewife’s kitchen. And I miss it. I like to be occupied, feel busy, else my mind is a devil’s workshop. Now that I have a kitchen at my disposal (even if it’s for a few days), hopefully the mind will get some rest and some baking can be done.

To me, baking has always been therapeutic, my kind of meditation. Even when the results are not so perfect, the whole process of sifting, mixing, kneading or beating calms my mind. In those moments I forget everything else, forget the issues I might be facing, the small conversations that have pinched me and just let go. Seeing the butter turn pale from a golden yellow when beaten with sugar is an accomplishment for me. The smell of a cake baking lifts my mood instantly and a bite into a warm fresh out of the oven cake just sends me to another world.

And that is what I plan to do the next few days. Bake. Cook. Experiment. And blog. So while I am gearing for the prep of my mom’s birthday cake, I thought to share two recipes that I revisited over the last few months. I will leave you with these for now, with the promise that I will be back soon.

One is the Chauhan family favorite Triple Layer Chocolate Mousse Cake. That’s the first thing my brother and his wife request when they meet me. That’s the first thing my mom asks me to make for dessert if she is calling someone over. The name says it all- three layers of chocolate goodness- a fudgy, flourless cake topped with a dark chocolate mousse layer and finished off with a white chocolate mousse topping. The other is a favorite of many- Butter Chicken.

I have slightly revised the recipe that I had earlier and now I am pretty satisfied with the results I get. In fact I like them a lot. The addition of roasted red bell pepper is what makes this dish special. Again for the recipe, either click here or click on the picture.

By the time this post goes live, I will have finished my One Week Raw Diet and most definitely will be feasting on some hot, cooked food. I plan to make dhoklas for my breakfast and in all probability that is what I will be eating the time this post goes live.

It definitely was a difficult week, with the dinner time being the toughest but honestly not as difficult as I thought it would be. I was sure I would quit by Day 3 or Day 4, and my body would be really weak, and would have a constant headache. The last time I went on a diet (quite a few years back) was when I tried the GM diet. By Day 4 of the GM diet, I had a headache and decided it wasn’t worth it and quit with a bowl of Maggi in my hand.

This diet, though, has been different. I did not feel weak at all. My skin improved- I had my periods when I started so I had the occasional pimple before that but I could feel my skin more bright than usual. I have lost about 5 pounds since the start of this month- which includes the one week of the gluten free sugar free diet and then one week I went raw. It might not seem much, but I was never going for anything drastic. My goal is to lose about 5-6 kgs (10-12 pounds) by the end of this month. I will be continuing on my gluten and sugar free diet till end October, with Halloween being the day I quit. I will talk more about how my raw diet went and share any other information that could be helpful to someone planning to do the same. But all that will be in another post. Today I will be sharing this lemon yogurt cake, which is neither raw, nor gluten free, nor is it sugar free, but if what I have heard about it is true, its one cake recipe you would want to try.

Vegan Chocolate Cake

Finally, completed my first triathlon! πŸ™‚

Now, the embarrassing part- I was one of the lasts to finish.(*sheepish look*)

While my swimming and run timings were pretty decent, everyone dusted me off in the cycling round. Before you make fun do understand, for me, the cycling part was the toughest. I only started cycling a month and half back, after more than a decade of not getting on a cycle. And it was a real task for me to do uphill cycling, which was almost 50% of the entire route. One of the roads we biked on is actually called Mountain road (not even Hill road- its called mountain!). So it wasn’t easy for me. And that’s why it took me a lot of time. And the wind didn’t help either when climbing uphill on the cycle.

Anyway, the idea this time for my first triathlon was to complete it. Next time I’ll probably think of actually competing!
