Earl Grey lemon coconut cake

It’s Christmas eve here in India, and since I am at my parents and my niece is visiting us there’s a lot of excitement around christmas in the house. We decorated our small little christmas tree today with some lights, and although my niece who found her presents and already opened them, she is still pretty excited about christmas.

My parents are leaving for Kasauli for two days to celebrate their anniversary with their friends. I will be babysitting my niece. I think I am being brave by planning an outing with my friends with her around, but hopefully she too will have a good time tomorrow. I would like her to see all the christmas decorations in the mall and maybe make her meet Santa as well. We baked a red velvet cake together for my parents anniversary, and even am glad to have my little helper with me always being so appreciative of my efforts.

Today I am sharing the last of the videos I did for TeaBox and Bake With Shivesh. Its an earl grey lemon coconut cake. I am in love with all the tea infusing in my baked goods and I am surely going to be experiment more with it. Since I planned to post this video just before Christmas, I made sure it had a more festive tune to it. Hope you like the upbeat music and the video.

Christmas Punch
One day to Christmas and I have the perfect christmas cocktail for you today.

Two posts back I mentioned how I teamed up with Bake with Shivesh and made some recipe videos using wines from Big Banyan. This Christmas Punch was the second in the series of videos I made for Bake with Shivesh.

Shivesh used the Rosa rossa to make this festive christmas punch. Addition of tea to the punch and some spices, takes a regular punch to an excellent celebratory cocktail. I was pleasantly surprised how well tea and wine go together, who would have thought?

I have ton of work to do tomorrow, but I am looking forward to a day with my friends on Christmas Day. Its been a while since I have met them and will be nice to have a day to just enjoy.

I love the set up that we did for this video. Love how the lights bring the christmas spirit in the videos. The song that I have used in the background is by Lyonn and is called We’ll light the sky. You can download it on iTunes.

The only regret that I have is that this Christmas I could not make any christmas cake. The last christmas I spent with my parents my mom and I had made the best christmas cake I have had till date. It was mostly my mom’s recipe, which was a mix of 3-4 recipes she found online and some other additions. She never noted down the ingredients, nor does she remember the different sites she picked the recipe from. I kept pestering her to recreate the recipe, she kept telling me she can’t and as a result we have no christmas cake this christmas.

Well. at least we have this punch! I am definitely making this again and would highly recommend you to too. You can find the recipe on Shivesh’s blog, and here is a video to help you in case you get lost.

Since we are talking about wine, and since I just dropped some today on my shoes, and since the following days will be filled with wine and if you are as clumsy as me and drop that wine on your clothes or suede shoes, I thought I will tell you the trick to save your clothes/shoes. For wine stains immediately blot (not rub) some table salt on the stain. I did that today and my shoes look like they will be fine. Now you can wear that white shirt and drink that red wine without fear! Happy holidays!

Orange and cranberry scones

If you have been following my previous posts, you might remember that I mentioned collaborating with Bake With Shivesh on some food videos. Today I am sharing the orange and cranberry scones video that I shot for Shivesh and Teabox.

I do have a recipe for cranberry scones on the blog, but I love how Shivesh infuses the milk with the TeaBox Breakfast tea and then uses it in the dough. It was fun shooting the videos, but editing them and fitting to make a one minute instagram applicable videos has been a pain, though I am glad how all of them are looking.

Three days till Christmas Day left and I would love to hear what you all are baking as part of your Christmas Day feast. Let me know in the comments below.

Last year, I made english scones, Chocolate crinkle cookies, olive bread, warm goat cheese and pear salad and artichoke chicken. This year I doubt it will be anything that elaborate since its only my grandfather, my 5 year old niece and me in the house. I have plans to meet my friends and spend some time with them, since the last couple of days have been busy with work. I would definitely bake something, just not sure what yet.

For now, I will just stare at these tea infused scones that I shot for Bake with Shivesh, and hope that some inspiration comes my way.
