Bacon Spaghetti Aglio Olio!

Aglio e Olio is one of the most basic pasta sauce made from garlic and oil. By making the aglio olio with fat left from cooking bacon,  the classic spaghetti aglio olio is taken up a notch.

One of my favorite food bloggers is Richa, from My Food Story. I love her recipes and she had posted this recipe for bacon spaghetti aglio olio a while back and I had made a mental note to try the recipe out soon. Soon came much later, but I am glad it did.

I love bacon fat- it’s the secret ingredient when I make scrambled eggs at home. So I knew I would love it in my spaghetti aglio olio. I used my regular aglio olio recipe, which is adapted from Ina Garten’s and added Richa’s twist of bacon to it. The result – a quick weeknight dinner which will have you licking your bowls.

Now that I have moved to India, there are certain things I really miss about the US. Besides my friends, the food has to top the list, and Chipotle’s Burrito Bowl is one of the things I miss quite a lot.

Before moving to Dallas, even in Morenci, Chipotle was a luxury and a must almost every time we visited Phoenix. I had attempted recreating the Chipotle Burrito Bowl recipe at home in the US as well. I remember it was really good, but somehow I never got around write the recipe down for the blog.

Orange and blueberry layer cake made for my grandfather’s 90th birthday!

Orange and Blueberry Cake

Yesterday was my grandfather’s 90th birthday. Although his birthday was yesterday, we had a big celebration where we invited friends and relatives on Sunday. Unfortunately, since I was busy with client work and a surprise video for him, I couldn’t make the cake for his 90th birthday celebration, but I did make this orange and blueberry cake for his actual birthday on the 6th.

There’s a lot to say about my grandfather, but one thing that always impresses me, besides his memory of past events, is his meticulous documentation.We wanted to surprise my grandfather with a short video showing glimpses of his life in pictures. Thanks to my grandfather’s perfect documentation skills, my mom and I were able to easily place his life history in pictures. It was fun going through his pictures, and in the process getting to know more about his life.

I thought I will share the video here on the blog, if any of you like going through old pictures. The pictures date back till 1930s (my grandfather was born in 1927) and document his life through the years.
