Sometimes the simplest of meals are the most comforting. It has again become cold in our part of the world, making it difficult to move out from the comfort of one’s bed and blanket. While I am glad I don’t have a 9 to 5 job and thus don’t have to wake up early in the morning to head out, there is a certain caveat associated with it. Without an external push, the lazy me ends up in bed without ever getting out.

To be fair (to me), last week was particularly hectic, with shoot days stretching to a 15 hour work day, so a little rest doesn’t hurt. I am trying my best to be more active on the blog. It had helped that work had been light the last couple of days, giving me enough time to spend in the kitchen to experiment or revisit old recipes on the blog and review/reshoot them. Last week besides experimenting with this asian chicken noodle salad recipe, I also revisited the flourless chocolate cake recipe from the blog archives and baked the white chocolate cranberry pistachio cookies to send to my brother and sis-in-law. I also made chocolate chip cookies and baked a barbie cake for my niece using the sponge cake recipe here and the filling frosting recipe from here. Yes, I was busy in the kitchen.

This week I was again traveling, so couldn’t experiment much but I did try a lot of new dishes and have a few things I would like to try in my kitchen. While working with other people’s food for client shoots has its own perks, I do love styling and shooting my own recipes. I also do enjoy the creative freedom I have, although I am lucky most of my clients trust me enough to give me a free reign.

This chicken noodle salad is adapted from a recipe on Gourmet Travelers app. I loved the sound of it, but I had to make a few adjustments since I didn’t have quite a few of the important ingredients called for in the recipe. Either way the chicken noodle salad came out delicious. I love the heating of the oil with the star anise- what a wonderful aroma it gave to the oil. Its something I am looking forward to trying more in my recipes.

Creamy Spinach Artichoke Dip

Spinach artichoke dip used to be one of my favorite appetizers to make in the US when I had guests over. I have made both baked and not baked versions of this dip and while I love the baked version, its this no cook- microwave version of spinach artichoke dip that I end up making because of the convenience of it. Plus, its super quick. I am not exaggerating when I say from start to finish this dish takes 10 minutes to make. And chopping/clean up is minimal. Don’t you love such recipes?

While artichokes can be expensive in India, I honestly don’t know a good enough substitute for them in this dip because the artichokes are the real stars in this dip, (besides the creaminess from the cream cheese). I would just say take the plunge and buy those canned artichokes and make it when you have guests over. They will love you for it! Mine did 🙂

I am trying to keep that in mind while posting recipes, though I might sometimes sway from it. Today, of course I am going with the majority of you and sharing this creamy spinach artichoke dip appetizer with you.

With the weekend here, what better excuse but to make it today itself! Serve it with homemade or store bought crackers or pita chips.
