After a very long break I am posting a Daring Bakers’ Challenge. And even though I am posting for it, I actually took an easy way out and did not dare myself too much with this month’s challenge.

 Ruth from Makey-Cakey was our March 2013 Daring Bakers’ challenge host. She encouraged us all to get experimental in the kitchen and sneak some hidden veggies into our baking, with surprising and delicious results!

Initially when I had seen the challenge I had plans to make a beets red velvet cake and try out a black bean brownie recipe I had been eying for a long time. But as you can see those plans did not pan out.

Instead I tried this recipe my mom uses to make whole wheat cupcakes. My sister-in-law loves these cupcakes and always requests my mom to make them. So since she is over I thought would make them for her and that ways I would be able to post for DB as well. Killing two birds with one stone! Pretty smart, aren’t I!

And with Easter this weekend, the recipe did seem apt. 🙂

Last week, we were in tank tops, complaining that its already getting so hot.

Today, it’s snowing!

Today is also our wedding anniversary!

Two years back, this day V and I entered into the “joys” of holy matrimony! We both took a leap of faith two years back, today.And then again tomorrow. (If you are confused, this post might help to clear your confusion)

I will be honest, things were not easy initially. An arranged marriage, completely new place, and thousands of miles away from my friends and family- people are right when they say the first year of marriage is always the toughest. It was tough for me and I am sure even for V. But we stuck through and today are celebrating our second year of togetherness! Hopefully there will be many more to come! 🙂

Doesn’t time really fly by? And doesn’t this feeling of time flying by become more pronounced during the end of a year and the beginning of another?

2011 surely flew by me.

The year was eventful, to say the least.

V survived a year of marriage with me!

I was able to make two trips to India this year. And I just realized almost half of this year was spent in India.

But the highlight of this year had to be the birth of my niece, Lahina. Oh how I miss that baby!
