The past few days have been crazy busy but lots of fun nonetheless. I do miss not being able to write on my blog, but I am glad that its been taken care of by some really superb blogger friends of mine: Ameena, Jane, Sawsan and today Leigh from Luv’n Spoonfuls.

Leigh not only has great recipes with beautiful photographs on her blog, but all her recipes have a wonderful balance between flavor and nutrition. I don’t remember now how I stumbled upon Leigh’s blog, but am so glad I did because there is so much to learn about healthy food that tastes great too. You should read her soapbox section on how and why she insists on 100% organic ingredients.

Today, Leigh shares a wonderful Gingerbread cake recipe that not only looks delicious but is packed with stuff that screams good-for-you!

When I was staying in a hostel (during my college years), I really used to look forward to my visits home.

Home was comfortable, no studies to worry about, no cleaning to do, no hostel food to crib about. Instead there was mom fixing one great meal after another, dad there to take care of every small work of yours, no money problem- perfect time and place to rejuvenate yourself before getting back to the usual grind.

Since hostel food was a regular rant during my conversations with mommy dearest, when it was time for me to come home during college breaks, my mom would religiously ask me, ‘what do you want to eat on your first day back?’

I had a peculiar request besides the rajma chawal and butter chicken on the menu.

I would request my mom to bake a vanilla cake, and here is where the peculiarity and specifity of the request shone- the cake had to be baked the day I come. The reason- that ways the whole house smells of freshly baked goodness when I enter the house.

Thank god V is not a weather man. If V says its not going to rain, it surely will. If he says there’s going to be a massive downpour, it is going to probably be the hottest day ever. It’s now a joke. If I want to be sure of the weather, I just ask him to look into his heart and tell me whether it will rain or not. Whatever he says, I expect the opposite.

Coming to think of it, I think he should be a weather man. He should just say opposite of what he feels and he will do great as one!

So, when he said today that its going to be a really hot day and there won’t be any rain nor any clouds, I was positive it will rain and I was right!

And when it poured, I missed the date nut torte I had last week. How I wish I had a slice of it to eat and enjoy the rain! As I had not posted a recipe last time when I mentioned it, I thought what better day to post about it. Coincidentally, its my Mom-in-law’s birthday in India today and this goes out to her as well!
