I am just learning how to cook this cuisine. Can you tell me, when a recipe calls for cashews, does it mean raw or roasted cashews? I am loving all of these wonderful flavors!
Hi Cindy, when in a savory gravy generally cashews are used after soaking them for a few hours and then made into a paste. For sweet dishes they are roasted and used as a garnish. Hope that helps.
