Cherry Tomato Gratin

Ingredients
  • 3 slices of whole wheat bread, cut into cubes (original recipe calls for french baguette but all I had on hand was whole wheat bread)
  • 250 gms small cherry tomatoes
  • 3-4 tbsp extra-virgin olive oil
  • 3 medium garlic cloves, thinly sliced
  • 1 tsp. dried parsley (or any other herb you like)
  • 1 Tbsp. freshly grated Parmesan cheese, plus 3 tbsp mozzarella cheese
  • ½ tsp. kosher salt, or to taste
  • 1 tsp. freshly ground pepper, or to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Lightly oil a 8.5" by 5.5" dish.
  3. In a large bowl, toss the bread cubes with the tomatoes, olive oil, garlic, parsley, cheeses, and salt and pepper.
  4. Scrape the mixture into the baking dish and bake in the center of the oven for 25-30 minutes, or until the bread cubes are browned and crisp and the tomatoes are very tender.
  5. Serve warm or at room temperature.
