Mixed Berries Coconut Popsicles

Super simple mixed berries coconut popsicles made with homemade coconut milk and mixed berries that make a great refined sugar free creamy frozen treat

Ingredients
  • 1 coconut, broken with coconut meat removed and cut into 1-2 inch pieces (in case using canned coconut milk- use 1 cup full fat coconut milk and don't add hot water).
  • 1 cup hot water
  • 1 cup frozen berries
  • 1-2 tbsp honey/agave/maple syrup
  • 1 tsp pure vanilla extract
Instructions
  1. Once you have broken the outer shell of the coconut, reserving the liquid, take a butter knife or spatula and remove the coconut meat from the outer shell.
  2. Cut your coconut meat into 1-2 inch pieces and add it to your blender.
  3. Add hot water to the blender and blend for 1-3 minutes until you end up with a smooth consistency paste. You could also use the coconut water that you extracted to make the milk.
  4. Remove the paste from the blender and pour into a cheescloth/kitchen towel, or strainer and squeeze out the coconut milk.
  5. I prefer to let the milk sit for a few hours in the refrigerator, so that the coconut cream can separate from the rest of the milk- resulting an even more rich and creamy popsicle. You could avoid this step, but I get better results when I do so.
  6. In a bowl, whisk together coconut milk, vanilla and honey.
  7. Pour the coconut milk into the popsicle moulds filling them ¾th of the way. Freeze for 10-15 minutes till set slightly.
  8. In the meantime, puree the berries in the blender with a little honey until smooth.
  9. Add the berry mix to the coconut milk filled popsicle moulds. Push in the popsicle stick, and let freeze till set, about 10-12 hours or overnight.
  10. Run mould under hot water to easily pop the popsicles out. Enjoy.
Note: In case you don’t want distinct layers, you could also blend the coconut milk with the berries. I feel it tastes better when it is all blended together, but I love the presentation of the layered look. Try both and see which do you prefer.
