Quick, weeknight gluten free recipe for phing/glass noodles stir fry.

Ingredients
  • 4 pkts (75 gms each) Phing / glass noodles
  • 4-5 eggs, beaten
  • 1 large onion, sliced
  • 5-6 big garlic cloves, finely chopped
  • 3 green chillies, slit into halves
  • 50 gms dried mushroom
  • 2 tbsp soy sauce
  • 1 tsp vinegar
  • 2 tbsp Sambal Oelek sauce
  • salt and pepper, to taste
  • 2-3 tbsp Spring onions, for garnish
  • 1 tbsp vegetable oil
  • 1 tbsp sesame oil
Instructions
  1. In a pot boil the dried mushrooms to rehydrate. Let cool off for a bit and then cut into slices.
  2. In the pan, heat 1 tsp oil. Add the beaten eggs and cook the eggs to make a scramble and keep aside.
  3. In a large pot, bring water to a boil. Add the glass noodles and boil for 4-5 mins. Drain and keep aside.
  4. In a wok, heat oil. Once hot add garlic and saute for a few seconds.
  5. Add the onions,green chillies an dsliced mushrooms and saute for a bit.
  6. Add the soy sauce, vinegar, sambal oelek and mix well.
  7. Add the the glass noodles and eggs to the wok. Season with salt and pepper. Mix well.
  8. Garnish with spring onions and little bit of seasame oil.
Note:
  1. As mentioned, A generally makes it with chicken so in case you do have that option, cut 1 breast chicken in strips and marinate in salt, pepper and soy for 10-15 minutes. Then cook them in a little oil. Add the chicken when you add the egg.
