Baked beans with mushrooms
 
 
A British favorite, these baked beans with mushroom and onions are perfect served with a slice of toast. A quick and easy meal, perfect for breakfast or even dinner.

Ingredients
  • 1 can Baked Beans
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 8-10 mushrooms, sliced
  • 3 cloves garlic
  • 1-2 green chillies
  • 1 tsp dried oregano
  • chopped coriander, for garnishing
  • Tabasco/chili flakes, optional
  • Toasted bread, to serve
Instructions
  1. In a skillet, heat butter over medium high heat.
  2. Add the garlic and cook for a few seconds till golden brown.
  3. Add the chopped onions, and cook till translucent.
  4. Add in the green chillies and cook for a few more seconds.
  5. Add the sliced mushrooms, and cook till the water dries up.
  6. Pour in the can of baked beans, and cook for 1-2 minutes till the mixture thickens up a bit. Season with salt and pepper, and mix in the dried oregano.
  7. Remove from heat, garnish with cilantro and serve on toast.
