Chocolate Zucchini Cake

Ingredients
  • 1 cup minus 1 tbsp all purpose flour
  • 1 cup whole wheat flour
  • 1 cup castor sugar
  • ¾ cup cocoa powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp cinnamon
  • 4 eggs
  • ¾ cup vegetable oil
  • ¾ cup applesauce
  • 3 cups grated zucchini
  • ½ cup chopped walnuts
  • 1 tsp vanilla extract
Instructions
  1. Preheat oven to 350 degree F or 180 degrees C.
  2. Generously grease a bundt pan.
  3. In a bowl, sift the flours, baking soda, cinnamon baking powder, salt and cocoa together. Add the sugar, and mix it all together.
  4. In another bowl, add the wet ingredients- eggs, oil, applesauce, vanilla together.
  5. Add the dry ingredients to the wet and mix till just combined. Fold in the nuts and grated zucchini.
  6. Pour batter into prepared pan.
  7. Bake in the oven for 50-60 minutes or until a tester comes out clean.
