Chocolate Zucchini Cake
- 1 cup minus 1 tbsp all purpose flour
- 1 cup whole wheat flour
- 1 cup castor sugar
- ¾ cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
- 4 eggs
- ¾ cup vegetable oil
- ¾ cup applesauce
- 3 cups grated zucchini
- ½ cup chopped walnuts
- 1 tsp vanilla extract
- Preheat oven to 350 degree F or 180 degrees C.
- Generously grease a bundt pan.
- In a bowl, sift the flours, baking soda, cinnamon baking powder, salt and cocoa together. Add the sugar, and mix it all together.
- In another bowl, add the wet ingredients- eggs, oil, applesauce, vanilla together.
- Add the dry ingredients to the wet and mix till just combined. Fold in the nuts and grated zucchini.
- Pour batter into prepared pan.
- Bake in the oven for 50-60 minutes or until a tester comes out clean.
