These healthy and flavorful tacos are a vegetarian's delight. Easy to put together they are perfect for a quick weeknight meal

Ingredients
  • 1 package extra firm tofu cut into cubes
  • 1 package broccoli slaw (if you dont have that just make your own by shredding broccoli stalk and carrots)
  • 1 small bunch red radishes, thinly sliced
  • ½ cup chopped cilantro
  • 1-2 green chillies, finely chopped (optional)
  • 1 bunch green onions, horizontally sliced
  • 1½ tbsp extra virgin olive oil ( I used eat.feed.love's harissa infused olive oil)
  • 1 lime zested and juiced
  • ¼ cup plain greek yogurt (can use nonfat)
  • 1 -2 tbsp taco seasoning
  • 8 8 inch whole wheat tortillas
  • ¼ cup shredded pepper jack cheese
  • ¼ cup homemade or your preferred jarred salsa
  • salt and pepper, to taste
Instructions
  1. Lay the tofu slices between layers of paper towels. Put a heavy skillet on top and let drain for 10 minutes. Its important to let all the moisture out to get crisp tofu pieces.
  2. In a large bowl, mix the broccoli slaw, radishes, green chillies, cilantro, green onions, 1 tbsp olive oil, lime zest and half of the juice.
  3. In another bowl add the yogurt, the remaining lime juice and season with salt and pepper.
  4. Brush the tofu on all sides with the remaining olive oil (I use the olive oil spray) Sprinkle the taco seasoning and make sure the tofu cubes are nicely covered. Use more if required.
  5. Heat a non stick skillet over medium high heat and cook the tofu till crisp, 5 minutes one side and about 2 minutes the other side.
  6. Warm your tortillas in the skillet. Fill tofu with the tofu, slaw, cheese, the yogurt sauce and salsa. Serve with lime wedges.
