Line a baking sheet with parchment paper and mist with cooking spray.
In a bowl mix the grated carrot and onions with the ground chicken, panko bread crumbs, hoisin sauce, grated ginger, soy sauce, sriracha/chile sauce. Season if required. Add more bread crumbs if required. Shape into patties of required size and place on shaped patties on the prepared baking sheet. Bake until cooked through, about 20 minutes
In a bowl mix the sliced mushrooms and onions with lime juice, sesame oil and soy sauce.
In another bowl mix the hoisin with the sriracha.
To assemble:
Warm the hamburger/slider buns in the oven.
Place the patty on the bun with a drizzle of the hoisin chilli sauce and the mushroom onion mixture.
