Walnut and Pumpkin Seed Bread

100% whole wheat bread filled with pumpkin, flax and sesame seeds and walnuts.

Ingredients
  • 500 grams whole wheat flour
  • Approx. 350 ml water
  • 7 grams or 2¼ tsp active dry yeast
  • 1 tsp honey
  • 1 tsp salt
  • 100 grams mixed seeds ( I used a mix of pumpkin and sesame seeds and used a little ground flax seeds)
  • 50 grams walnuts, chopped
  • 1 tsp olive oil
Instructions
  1. In a measuring glass, measure out ¼ cup lukewarm water out of the 350 ml water. Add the honey and sprinkle the yeast. Let bubble for 5-10 minutes.
  2. In a bowl of a stand mixer, or any other bowl, measure the flour, ground flax seeds, salt and the water and the activated yeast. Using the dough hook knead the dough for 7-10 minutes, till springy to touch. You can also knead the dough on a clean surface.
  3. Mix in most of the seeds and all the chopped walnuts well and leave the dough to rise covered for an hour or so until double in size.
  4. Punch the dough back once it rises double in size and shape into a large round.
  5. Roll the dough on the remaining seeds and place on a parchment lined or greased baking tray, loosely covered for 30-40 minutes until double in size.
  6. Preheat oven to 220 C / 425 F. Bake the bread for 15 minutes at this temperature and then reduce the temperature to 190 C/ 380 F and bake for another 30 minutes or until the loaf sounds hollow when tapped at the base.
  7. Let cool on wire rack completely before slicing the bread.
