Super Easy Banana Trifle Pudding

Serves: 6-8
Ingredients
  • 1 9-inch vanilla cake, cut in half
  • 1.5 cups vanilla custard (you can added 1.4 tsp of concentrated banana flavoring)
  • 2 tbsp cognac, brandy, rum or Baileys
  • ½ cup toasted walnuts
  • 2-3 bananas, sliced
  • ½ tsp cinnamon
  • 2 tsp lemon juice
  • ½ tsp nutmeg
  • ½ cup jam of your choice (raspberry or mixed fruit works best- you might need to heat it to thin it out, or add a tsp of water. I added orange juice but depending on your jam you might want to avoid this step.)
  • 2 cups heavy cream
  • 3 tbsp confectioners or fine granulated sugar
  • 1 tbsp Baileys (optional)
Instructions
  1. For this recipe I used a 8.75 by 6.75 rectangular glass dish, but you could use any dish of your liking. Just make sure it is big enough to layer in.
  2. Prepare the custard and add the alcohol, if using and banana flavoring.
  3. Cut the bananas into slices. Put in bowl. Add lemon juice, cinnamon and nutmeg. Mix well.
  4. Cut the cake in half, horizontally.
  5. Arrange the bottom half of the cake in your dish.
  6. Poke it with a tooth pick at several places. Pour more than half the custard on top. I used about 1 cup of custard. depending on the cake and how moist or dry it is you might want to increase the amount of custard used.
  7. Spoon the most of the jam over, spreading it evenly.
  8. Add the walnuts and bananas. Here is when you can drizzle a little dulce de leche, if using.
  9. Repeat the layer. (Note: I added the bananas only in the middle layer and repeated the layering only once.)
  10. In a large bowl, whip cream until stiff peaks are just about to form. Beat in vanilla and sugar until peaks form. Make sure not to over-beat, or cream will become lumpy and butter-like. You could also add a little Baileys to the whipped cream, just saying.
  11. Top the layered pudding with the whipped cream. Decorate with some shaved chocolate. Chill in the refrigerator until ready to serve.
