Mix the flours together with salt in a large bowl.
In a measuring glass with 100 ml, add the yeast. Let ferment for 5-10 minutes till its frothy.
Pour this into the flour and add the remaining water and molasses.
With a wooden spoon, mix the dough and add in the walnuts and pumpkin seeds. The dough will be sticky but should be more or less smooth.
Coat with oil and cover with a wet towel or plastic wrap and let sit in a warm place till it triples in volume for about 2-3 hours.
Once tripled, carefully turn on a well floured surface and make desired shape, making sure that you handle the dough very gently trying not to remove the trapped air in it.
Preheat oven to 425 F and bake in oven for 30-35 minutes till golden brown.
If painting the bread, then bake till light golden- about 20-25 minutes. Remove and as quickly as you can paint and then let bake for another 10-15 minutes till golden brown.
