Tofu Tacos

When I posted the photo of these tofu tacos on my social media accounts, soon I started getting requests for the recipe. And rightly so. These tacos are super easy to make and taste great and are chock full of all the good stuff.

I recently got the Food Network’s The Best and Lightest cookbook to review and have been enjoying my time cooking through it. The recipe for these tofu tacos is from that cookbook. I have had great success in all the recipes I have tried and look forward to trying more from the cookbook. You can read more about my review here. I did want to make a more V-day oriented recipe and post and while these tacos would be great any day, I had originally planned to do a more sweet (read chocolate) oriented post like . These eclairs that I posted on my instagram were my choice but I made a mistake with the choux dough and I did not get the right shape. They tasted great though and V and I have been chowing them down like crazy. Hopefully a few more tries and I will be able to post a recipe soon. Instead I am sharing these tofu tacos recipe today.

So, what are all of your Valentine’s Day plans? We actually have none for now. My mom is coming next week so I guess it will be mostly spent getting the house completely ready. Going out on Sunday might be a pain given that most nice places will have reservation issues. Instead I think we might head out today for pre-V-day celebrations.

If you are in the Dallas area the Arboretum has a special discounted ticket price of $5 going on. Its been on my list of things to do in Dallas, so if we get some time off V and I might spend our day there. For President’s Day they also have an all-American weekend celebration, with patriotic music and $1 hot dogs and $2 cherry pies.

This weekend I will be working on a DIY as well for the guest room and if I succeed I will post the pictures along with the details on the blog. I am pretty excited about it and just hope I am able to translate what I am envisioning. For now I will leave you with these recipe for really easy tofu tacos. The vegetarian in your house (and others) will love them.

Tofu Tacos

These healthy and flavorful tacos are a vegetarian's delight. Easy to put together they are perfect for a quick weeknight meal

Ingredients

1 package extra firm tofu cut into cubes
1 package broccoli slaw (if you dont have that just make your own by shredding broccoli stalk and carrots)
1 small bunch red radishes, thinly sliced
1/2 cup chopped cilantro
1-2 green chillies, finely chopped (optional)
1 bunch green onions, horizontally sliced
1 1/2 tbsp extra virgin olive oil ( I used eat.feed.love's harissa infused olive oil)
1 lime zested and juiced
1/4 cup plain greek yogurt (can use nonfat)
1 -2 tbsp taco seasoning
8 8 inch whole wheat tortillas
1/4 cup shredded pepper jack cheese
1/4 cup homemade or your preferred jarred salsa
salt and pepper, to taste

Instructions

Lay the tofu slices between layers of paper towels. Put a heavy skillet on top and let drain for 10 minutes. Its important to let all the moisture out to get crisp tofu pieces.
In a large bowl, mix the broccoli slaw, radishes, green chillies, cilantro, green onions, 1 tbsp olive oil, lime zest and half of the juice.
In another bowl add the yogurt, the remaining lime juice and season with salt and pepper.
Brush the tofu on all sides with the remaining olive oil (I use the olive oil spray) Sprinkle the taco seasoning and make sure the tofu cubes are nicely covered. Use more if required.
Heat a non stick skillet over medium high heat and cook the tofu till crisp, 5 minutes one side and about 2 minutes the other side.
Warm your tortillas in the skillet. Fill tofu with the tofu, slaw, cheese, the yogurt sauce and salsa. Serve with lime wedges.
